Frozen Fat Bombs

 

Fat Bombs – Sounds sinister! These delicious snacks are so tasty you’d think they were bad for you…

Welcome to the wonderful world of fat my friends. Over the last few years, we’ve realised that our ancestors had it right. Fat is good for us! It provides us with long-term energy which supplies power to all our essential processes, stimulates our digestive system and is used as a carrier for countless vitamins and minerals. Fat literally piggybacks nutrients into our bodies. On top of all this, fatty acids (including cholesterol) makeup nearly half of every single cell membrane. So yeah it’s kind of important!

This recipe can be adapted to include any of your favourite flavours including berries, pear, lime or even bacon! The choices are endless…

The secret ingredient in this recipe is MCT oil (C6, C8 & C10 – not C12), there’s a great blog from Bulletproof explaining why. Basically, these oils are rapidly absorbed and made available as fuel for the body in the form of Ketones. Ketones are an alternate fuel source for the brain, helping to stabilise brain function. They also play a role in regulating appetite, immune functions & lower heart disease risk factors (Nutrition Review).

INGREDIENTS

Berry

  • 250g cream cheese

  • 50g butter

  • 100g or 1 cup coconut cream

  • 1/2 x cup mixed berries

  • 1/2 banana

  • 4 drops citrus essential oils or 1/2 zest

  • 1/2 cup desiccated coconut, toasted (flakes or chips are great for adding texture)

Chocolate Topping

  • 80g extra dark chocolate – 90% cocoa solids or more

  • 50g coconut oil

  • 4 drops peppermint Oil

  • 30mls MCT oil (optional, helps with brain function and concentration)

INSTRUCTIONS


Chocolate Topping

  • Melt the chocolate ingredients over a double boiler (A double boiler is two pots that are stacked. The bottom pot is filled with water, then the secondheat proof bowl is stacked on top).

  • Allow to melt, stir to combine

  • Distribute evenly into the bottom of silicone moulds

  • Place in freezer for at least 10min or until frozen

Berry Bombs

  • Allow all your ingredients to come to room temperature. Because you are working with fat it needs to be soft to combine well. Cold or frozen berries will drop the temperature of the mixture and make it difficult to mix.

  • Toast coconut until golden brown

  • Place the berries, banana, coconut cream & citrus oil into a blender to create a smooth texture.

  • Transfer berry mixture to a mixing bowl, add remaining ingredients & combine well.

  • Scoop the mixture on top of the pre-prepared frozen chocolate toppings to fill the silicone mould.

  • Return to freezer and allow to set.

  • Want to simplify? Combine ingredients & roll into ball then pop into freezer to set!

Store in freezer (I imagine for months, but they won’t last a week).
Let stand out of the freezer for 5-7 minutes before serving. Warming them up will allow the fat to soften and enhance the flavour.
